Easy Strawberry Freezer Jam!

It is strawberry picking time here in NJ! On Sunday afternoon the boys and I went to a local farm and picked 10 lbs. of strawberries for about $14! So much cheaper than the 4 and a half pounds for $10 that we purchased at the local farm market the week before!

We love strawberries here! (well three of us does, Kaden…well he does not like much of anything, but that is a whole ‘nother story!) We love to just eat them plain, mashed with a bit of sugar or our favorite strawberry shortcake!

I have made strawberry jam in the past, which can be labor intensive!  I have never made freezer jam! I had plans to make some last year but never got around to it. Not so this year!

It is so fast and easy! The best part! No cooking! The other best part, a small amount of sugar is used! This jam tastes so good, so much better than store bought jam!

What you need:

1 2/3 cup of strawberries (washed, and finely chopped)

2/3 cup sugar

one packet of Ball real fruit Instant Pectin

containers I use Ball 8 oz. plastic freezer jars or Ball 4 oz. quilted glass jelly jars.

a bowl for mixing

Follow the directions on the packet of pectin. Which is basically adding your pectin and sugar to a bowl and mix, then add strawberries, mix for three minutes. I like to use a potato masher and let sit for 30 minutes. Fill your containers and freeze (be sure to leave a little head room for expansion in the freezer)

That’s all there is to it! I really like that is makes a small batch.

This was what I ended up with minus the two we have eaten this week and the one I gave away to my parents!

I think we are going to try this with cherries, blueberries and peaches later in the summer!
