Well folks it is that time of year again here in my little neck of the woods! Pickling time! We have a little garden this year and I planted pickling cucumbers. Today I pickled the first harvest. It is so quick and easy to make and they taste oh so yummy! I have posted the recipe below! Enjoy!
1 lb. sliced cucumbers (1 quart)
2 Cups thinly sliced onions (I dice mine)
1 Tbsp salt
3 Tbsp water
1/2 Cup Cider Vinegar (do not use white vinegar)
1 Cup Sugar
Combine: water, salt, onions and cucumbers.
Let stand at room temperature for 2 hours Add sugar and vinegar. Stir until dissolved.
Pack lightly into 2- one quart containers.
Cover and freeze overnight or up to six weeks.
Note: You can freeze them for much longer than six weeks. I make enough to last about a year with no problems.
You can use any type of cucumber, however I prefer the smaller pickling cucumber for this batch, but I have used regular cucumbers in the past.
